
Cranberry Christmas Cocktail by Erin Ziering
Hosting can be lots of fun and as you may know us Millennial Mamas love a good theme cocktail! Surprising your guests with a themed drink is even more fun! Who doesn’t love a good holiday drink, especially one with fresh cranberries? I am sharing my favorite, refreshing Christmas Party Cocktail that I will be sharing at our Millennial Mama holiday party this year with our friends!
Ingredients
2 cups of fresh Cranberries
1 cup of maple syrup
2 cups of dry red wine
1/2 cup light brown sugar
1/2 teaspoon of vanilla extract
1 tablespoon of Lemon Zest
1 teaspoon of crushed peppercorns
1 pinch of salt
2/3 cup of granulated sugar
Club Soda to top the drinks
DIRECTIONS

Preheat oven to 350 degrees. Bring syrup, red wine, light brown sugar, vanilla, lemon zest, peppercorns, and salt to a boil in a medium saucepan, whisk it occasionally.

Put the cranberries in a deep baking dish. I used a pie pan. Pour cooked wine sauce over the cranberries. Cover this tightly with foil, and bake until cranberries are soft but do not burst, about 10 minutes. Using a slotted spoon, transfer cranberries to a bowl; cover with 1 cup cooking liquid. Let cool completely.

Bring 1/2 cup cooking liquid and the granulated sugar to a boil in a small saucepan, whisking until the sugar has dissolved. Reduce heat to low; and simmer until liquid has reduced ( about 6 minutes.) Pour through a strainer and into a medium bowl; let cool completely.

Take out about 5 cranberries per cocktail. I used 5 per guest. Place them on skewers that will fit your glasses. I like to decorate the top of each skewer using different foam stickers so that the guests can identify their own drink.

To serve, use equal amounts of puree and the syrup in your holiday glasses. Add skewers, and fill glasses with ice. Top with your club soda, and ENJOY!
