Summertime weekend BBQing is a part of the culture of the Midwest. Having your neighbors, friends and family get together. Spending time enjoying food, having a beer and watching the kids play. I miss those days the most while living on the west coast. I love the 4th of July because it reminds me so fondly of our summer weekends while growing up. This year I wanted to incorporate a taste of home into our classic BBQ menu. As a Millennial Mama, I of course called up my mama to get her Classic Midwest Style Potato Salad recipe.
Ingredients-
4 Potatoes- peeled and cut into 1 inch cubes
2 eggs- hard boiled
1/2 small white onion
3 ribs (leafstalk) of celery- diced
1 cup Mayonnaise
2 table spoons of Mustard
1/4 cup Relish
In large pot boil potatoes cut into 1 inch cubes until soft but not mushy. In small pot boil eggs until they reach hard boiled.
In a mixing bowl, mix 1/2 white onion, 3 leafstalks of diced celery, 1 cup of Mayonnaise, 2 table spoons of Mustard and 1/4 cup of Relish. Add 1 hard boiled egg diced when ready. I also like to add ground peppercorns for taste.
When the potatoes are soft add them to the mixture. Stir gently as to not cause potatoes to mash. Top with the second crumbled hard boiled egg. My mom likes to sprinkle Paprika for color – Refrigerate for at least 1 hour.
Your potato salad is now ready as the perfect side for your summer BBQ~ Enjoy
